Pan-fry or grill these steaks over high heat for 3–5 minutes per side to achieve perfect medium-rare to medium doneness. The key to juicy, tender results is cooking quickly and resting for at least 5 minutes before serving. This brief cooking time locks in the natural flavours and moisture that make grass-fed lamb so distinctive.
