To cook lamb shanks effectively, use low-and-slow moist heat methods such as braising or slow-roasting. This breaks down the tough connective tissue into tender gelatin. While safe to eat at 65°C, shanks typically require an internal temperature of 90°C or higher to achieve that prized fall-off-the-bone tenderness. Slow cooker, oven, or casserole methods work beautifully.
