Lamb shoulder is perfect for slow cooking. Roast at 160°C for 3-4 hours, covered with foil to retain moisture. Season generously with salt, pepper, and herbs like rosemary or thyme. Add root vegetables and stock for a classic one-pot meal. For faster results, braise in a heavy-bottomed pan on the stovetop for 2-3 hours. The meat becomes tender and flavourful as the fat renders down. Ideal for Sunday roasts, stews, and curries.
